Super Bowl is right around the corner and I'd like to share a family favorite! It does take a bit of time as the chicken is cooked in the slow cooker. I find that the slow cooker is best to create the juiciest pulled chicken and once you add the ingredients, you don't have to do anything except let it cook. So with that, here's my recipe for Nachos Supreme! Ingredients:For the pulled chicken:
-Chicken breasts -1/2 onion chopped -Tomato puree -1/2 tablespoon chopped cilantro -2 teaspoons cumin -1 teaspoon smoked paprika -Salt + pepper to taste Add all ingredients to the slow cooker and let it cook for about 5-6 hours while stirring periodically throughout. At about 4 hours the chicken will be tender enough to start shredding. Use two forks to pull the chicken apart. Let it cook for the remainder of the time. Once done start assembling the nachos For the beans: -3 cans black beans rinsed and drained -Salt + pepper to taste -1/2 cup of tomato puree -1/2 cup chopped onions -1-2 tablespoons of oil Sauté the onions in oil for a couple of minutes. Add black beans, tomato puree, and seasonings and stir. Let it cook for about 20 minutes Start to assemble the nachos with your favorite brand of tortilla chips and shredded cheese. Use a large casserole dish and start with the tortilla chips. Next add the cheese, cooked beans, and shredded chicken. Repeat the steps and create several layers. End with a final layer of cheese and place in a 350 degree oven for about 10 minutes or until the cheese has melted. Top with pico de Gallo (chopped red onion, tomato, a bit of lime juice, sprinkle of salt and cilantro and mix together) and sour cream. Enjoy!!
